BRAISED FISH WITH SUN-DRIED TOMATO SAUCE

- 1 large onion, chopped
- 1 teaspoon minced garlic
- 1 tablespoon olive oil
- 1 cup clam juice or reduced-fat chicken broth
- 3 tablespoons chopped oil-packed sun-dried tomatoes
- 1 teaspoon dried marjoram leaves
- 1/2 teaspoon dried oregano leaves
- 4 halibut steaks (about 4 ounces each)
- 1 can (8 ounces) reduced-sodium tomato sauce
Pepper, to taste
Sauté onion and garlic in oil in large skillet until tender and well-browned. Stir in clam juice, sun-dried tomatoes, and herbs. Heat to boiling; boil, uncovered, stirring frequently until liquid is almost evaporates, about 5 minutes.
Add fish and tomato sauce; simmer gently until fish is tender and flakes with a fork, 3 to 5 minutes. Season to taste with pepper.
