    CHERRY TOMATOES STUFFED WITH CRAB
    Plan ahead….needs to refrigerate at least 1 hour.

    Serves: 12

    36 large cherry tomatoes
    1/4 tsp. salt
    1/4 c. low-fat cottage cheese
    1-1/2 tsp. minced onion
    1/2 tsp. prepared horseradish
    1-1/2 tsp. fresh lemon juice
    1/8 tsp. garlic powder
    1/2 lb. (8 oz.) imitation crabmeat, flaked
    1/4 c. minced celery
    1 T. finely chopped green pepper
    Parsley flakes

    Cut the tops off the tomatoes with a small knife and remove pulp with a small spoon. Sprinkle insides of each tomato with salt. Invert tomatoes on paper towels and let drain.

    Place cottage cheese in food processor or blender and process until smooth (about 2 minutes). Add the next 4 ingredients and process 1 minute more. Stir in crabmeat, celery and green pepper.

    Stuff each tomato with crab meat mixture. Arrange on serving platter and refrigerate for at least 1 hour before serving.

    One 3-tomato serving equals: 35 calories (4 from fat)…0 gm fat…6 mg cholesterol…3 gm carbohydrate…1 gm fiber…5 gm protein…106 mg sodium ++++ Exchanges: 1 vegetable ++++ WWP: 0
