    SWEET & SOUR RED CABBAGE

    Serves: 10

    1 head (about 3 lb) red cabbage
    1 cup distilled white vinegar
    1/4 cup sugar

    Cut cabbage in half from top to bottom and cut out core. Cut each half in 3 wedges, then thinly slice.

    Place cabbage, vinegar and sugar in a large, heavy pot. Cover and bring liquid to a boil. Reduce heat, cover and simmer, stirring occasionally, 1-11/4 to 2 hours or until cabbage is tender. Transfer to a serving bowl.

    One serving equals: 90 calories, 2 g protein, 23 g carbohydrate, 2 g fiber, 0 g fat (0 g saturated fat), 0 mg cholesterol, 12 mg sodium ++++ WWP: 2
