8 oz. uncooked angel hair pasta
2 c. sliced fresh mushrooms
1/2 c. chopped green pepper
1/4 c. chopped onion
4 tsp. olive or canola oil, ‘divided’
1 can (15 oz.) pasta sauce
1/4 c. sliced ripe olives
1/2 c. shredded part-skim mozzarella cheese
1/4 tsp. Italian seasoning
Cook pasta according to package directions; drain. In a 10-in oven- proof skillet, sauté mushrooms, green pepper and onion in 1 tsp. oil until tender. Remove with slotted spoon and keep warm.
In same skillet, heat remaining oil over medium-high heat. Spread pasta evenly in skillet to form crust. Cook for 5-7 minutes or until lightly browned. Turn crust onto large plate. Reduce heat to medium; slide crust back into skillet.
Top with pizza sauce, sautéed vegetables, olive, cheese and Italian seasoning. Bake at 400-F for 10-12 minutes or until cheese is melted.
