New Potatoes with Caviar

Plan ahead....needs 24 hours to make Double Thick Yogurt.
Servings: 48 as appetizer
24 small unblemished new potatoes (about 2 1/2 lbs.)
1 cup Double-Thick Yogurt***
5-oz jar salmon caviar
Snipped chives as garnish
Scrub the potatoes carefully without breaking the skin and bake in a preheated 350 degree F oven until soft, about 45 minutes.
Cut each potato in half and top each half with 1/2 teaspoon Double Thick Yogurt and roughly 1/4 teaspoon salmon caviar. Top with a few snipped chives. Serve while still warm.
The recipe can easily be increased on decreased as required.

***DOUBLE THICK YOGURT: Or YOGURT CHEESE:
Use 1 16-oz. container plain low-fat yogurt, no gelatin added. Line a non-rusting colander or sieve with large piece of cheesecloth double thickness or large coffee filter; place colander over deep bowl. Spoon yogurt into prepared colander; cover with plastic wrap. Refrigerate until liquid no longer drains from yogurt, about 24 hours. Remove yogurt from cheesecloth and place in separate bowl; discard liquid.
