    Diabetic Low-fat & No-fat Meals in Minutes – M.J. Smith, R.D.

    Serves: 4

    1 c. evaporated skim milk
    Sugar substitute equivalent to 1 T. sugar
    2 c. strong freshly brewed coffee
    Sprinkle of cinnamon

    Place milk in a 2-cup measuring cup. Microwave on high for 1 minute. Place hot milk and sugar substitute in a blender container. Cover with vented lid and blend until frothy, about 1 minute.

    To serve: Divide coffee into 4 mugs. Top each with frothy milk and sprinkle with cinnamon.

    One 6-oz. serving equals: 47 calories…0 fat…4 gm protein…7 gm carbohydrate…2 mg cholesterol…68 mg sodium ++++ Exchanges: 1/2 skim milk
