Diabetic Exchanges......Plan ahead....pineapple chunks need to be frozen after being drained.
List of Ingredients
1 can (20 oz.) unsweetened pineapple chunks
1 c. buttermilk
2 tsp. vanilla extract
2 tsp. liquid artificial sweetener
Mint leaves, optional

Serves: 5
Drain pineapple, reserving 1/2 c. juice. FREEZE pineapple chunks.
Place juice, buttermilk, vanilla, sweetener and frozen pineapple into a blender. Blend until smooth.. Pour into glasses and garnish with mint if desired. Serve immediately.
NUTRITIONAL ANALYSIS: One serving equals: 74 calories, 52 mg sodium, 2 mg cholesterol, 16 gm carbohydrate, 3 gm protein, 1 gm fat ++++ DIABETIC EXCHANGES: 1/2 skim milk, 1/2 fruit.
