2 ounces BAKING chocolate, melted and cooled
6 tablespoons Butter Buds
1 teaspoon vanilla
1/2 cup prunes, pitted and pureed
1/2 cup honey
3 whole egg whites, whipped to soft peaks
1/4 cup sugar, whipped with egg whites
1/2 cup whole wheat flour, sifted with baking powder
1/2 teaspoon baking powder
1/4 cup walnuts, chopped
For Prune Puree:
Combine prunes with 4 tablespoons of water and process in food processor (or buy baby prunes) and set aside.
Set oven at 325 and spray an 8" square pan with nonstick spray. Or use a 9" pan for a 2" brownie.
Combine cocoa, honey, vanilla, prune puree, butter buds and melted chocolate. Whip egg whites and sugar to soft peaks and gently fold chocolate mixture. Fold flour mixture into batter and spread evenly in pan. Sprinkle with nuts and bake for 30 minutes until done. Cool and cut into 1 & 1/2" or 2" squares.
