1/4 cup margarine -- softened
2/3 cup sugar
2 egg whites -- divided
2 tablespoons water
2 teaspoons vanilla extract
3/4 cup all-purpose flour
1/4 teaspoon baking powder
1/3 cup unsweetened cocoa
8 peppermint candy pieces -- finely crushed
Vegetable cooking spray
Beat margarine at medium speed of an electric mixer until creamy; gradually add sugar, beating well. Add one egg white, water, and vanilla; beat well. Combine flour and next three ingredients; add to margarine mixture, stirring just until dry ingredients are moistened. Set aside.
Beat remaining egg white at high speed until stiff peaks form; gently fold into cocoa mixture. Pour into 8-inch square pan coated with cooking spray.
Bake at 350ºF. for 22 to 24 minutes or until edges pull away from pan slightly. Cool in pan on a wire rack.
