Yield: 32 servings
1 1/2 cups unbleached flour
1 cup whole wheat pastry flour
1/2 cup sugar
1 1/2 tsp. baking soda
1 tsp. ground cinnamon
1 tsp. ground cloves
1/4 tsp. ground nutmeg
1/2 cup cooked mashed pumpkin
2/3 cup molasses
1 cup water
2 egg whites
1/2 cup golden raisins
1/4 cup chopped walnuts
Combine the flours, sugar, baking soda, and spices, and stir to mix well. Add the pumpkin, molasses, water, and egg whites, and stir to mix well. Fold in the raisins and nuts.
Coat a 9 x 13-inch pan with nonstick cooking spray. Spread the mixture evenly in the pan, and bake at 350 F. for 30 to 35 minutes, or until a wooden toothpick inserted in the center comes out clean. Cool to room temperature, cut into squares and serve.
