    Servings: 12

    1 dash cream of tartar
    1 tbsp pumpkin seeds, roasted
    1 tbsp flour -- unbleached
    1 tbsp whole wheat flour
    1 tbsp sesame seeds
    1 tbsp cornmeal
    1/2 tsp baking powder
    2 eggs -- separated
    1 pkt Artificial sweetener (SPLENDA)
    1 dash seasoned salt
    2 tbsp ricotta cheese -- whole milk
    2 tbsp butter -- melted


    Preheat oven to350°F-180°C.

    Mix flours, seeds, cornmeal, and baking powder together. Beat in egg yolks. Sprinkle with sugar substitute and seasoned salt. Mix cheese with butter. Add dry ingredients to cheese mixture and blend well. Beat egg whites with cream of tartar until stiff. Fold into cheese mixture.

    Spoon into a small oiled loaf pan. Sprinkle with pumpkin seeds and bake for 50 minutes. Cool on a wire rack.
