    Makes 1 loaf, 12 slices

    2 cups all-purpose flour
    2 tsp. baking powder
    1 tsp. baking soda
    1 tbsp. sugar
    1/2 tsp. dry mustard
    1/2 tsp. salt
    1/4 tsp. garlic powder
    1 cup shredded reduced-fat sharp cheddar cheese (4 ozs.)
    1 1/4 cups buttermilk
    2 egg whites
    1 tbsp. butter or margarine, melted
    2 tbsp. minced onions

    Preheat oven to 325 F. Combine flour and next 7 ingredients in a large bowl. Set aside. In a small bowl, beat together buttermilk, egg whites, butter, and onions using a whisk. Add buttermilk mixture to flour mixture, stirring just until moistened.

    Spray an 8 x 4-inch loaf pan with non-stick spray. Pour batter into pan. Bake for 45 minutes or until wooden pick inserted in center comes out clean. Let cool in pan for 10 minutes before serving. Serve warm. .

    Per slice: 120 calories, 3 g fat (22% from fat), 17.1 g carbohydrate, 6.6 g protein, 361 mg sodium, 10 mg cholesterol
