Serves 12.
1/2 pound mixed dried fruit
1/2 pound raisins
1-1/4 cups brown sugar
1-1/4 cups cold tea
3-1/2 cups cake flour
Pinch salt
1 egg, at room temperature, beaten
ICING:
1-1/3 cups powdered sugar
2 tablespoons cold water
Preheat oven to 375 degrees. Butter and flour a loaf pan; line with parchment paper or waxed paper.
Mix together mixed dried fruit, raisins, and brown sugar. Add cold tea; mix well. Stir in flour, salt, and egg. Pour mixture into prepared pan. Bake 1 hour. Cool slightly before removing from pan.
ICING:
Mix together powdered sugar and cold water. If too thin, add more powdered sugar. If too thick, add a very little amount of water. Spread on almost-cooled cake.
