Holiday Thumbprint Cookies

Yield: 20 cookies
1 pkg. (8 oz.) sugar-free, low-fat yellow cake mix
3 T. orange juice
2 tsp. grated orange peel
1/2 tsp. vanilla
4 tsp. strawberry all-fruit spread
2 T. pecans, chopped
Beat the first 4 ingredients on medium speed for 2 minutes, until mixture looks crumbly. Increase speed and beat 2 minutes longer or until smooth dough forms. (Dough will be sticky.) Coat hands with cooking spray. Roll dough into 1-in. balls. Place balls 2-1/2-in apart on baking sheets coated with nonstick cooking spray. Press center of each ball with thumb. Fill each thumbprint with 1/4 tsp. fruit spread. Sprinkle with nuts. Bake at 350º for 8-9 minutes or until light golden brown and they lose their shininess. Do Not Over Bake. Remove to wire racks to cool completely.
