    No carbohydrate levels available.
    Yield: 40 cookies

    1 cup whole wheat flour
    1 cup oat bran
    3/4 cup brown sugar
    3/4 tsp. baking soda
    2 - 3 tsp. pumpkin pie spice
    1/2 cup mashed cooked or canned pumpkin
    1/4 cup honey or molasses
    40 small pecan halves

    In a large bowl, combine the flour, oat bran, brown sugar, baking soda, and pumpkin pie spice, and stir to mix well. Add the pumpkin and the honey or molasses, and stir to mix well.

    Coat a baking sheet with cooking spray. Roll the dough into 1-inch balls, and place 1 1/2 inches apart on the sheet. Press a pecan half in the center of each cookie to flatten the dough.

    Bake at 300 F. for 15 minutes, or until lightly browned. Cool the cookies on the pan for 1 minute. Then transfer to racks, and cool completely. Serve immediately, or transfer to an airtight container, and arrange in single layers separated by waxed paper.
