    Down-Home Diabetic Cookbook – Taste of Home Books
    Yield: 3 dozen

    1-1/2 c. flour
    1/2 c. whole wheat flour
    2 tsp. baking soda
    1 tsp. cinnamon
    1 tsp. cloves
    1 tsp. ground ginger
    Egg substitute equivalent to 2 eggs
    1/2 c. sugar
    1/4 c. packed brown sugar
    1/4 c. vegetable oil
    1/4 c. molasses

    In a mixing bowl, combine the first 5 ingredients. In another bowl, combine the remaining ingredients. Add to flour mixture; mix well. Drop by teaspoonfuls 2-in. apart onto baking sheets coated with nonstick cooking spray.

    Bake at 350-F for 8-10 minutes or until cookies spring back when lightly touched. Cool on pans for 5 minutes before removing to wire racks to cool completely.

    One cookie equals: 63 calories…16 mg sodium…trace cholesterol…11 gm carbohydrate…1 gm protein…2 gm fat…trace fiber
