    Makes about 5 dozen.

    - 1 cup stick margarine, at room temperature
    - 2-1/2 cups brown sugar
    - 1 egg
    - Egg substitute equivalent to 1 egg, at room temperature
    - 2-1/2 cups flour
    - 1/2 teaspoon baking soda
    - 1 cup chopped walnuts


    Preheat oven to 350 degrees F. Grease cookie sheets or line with parchment paper. Sift together flour, salt, and baking soda.

    Cream margarine and sugar. Add egg and egg substitute; beat well. Stir in dry ingredients and nuts. Mix well.

    Drop by teaspoons onto cookie sheets. Bake at 350º for 15 minutes.

    Per cookie: 95 cal, 4 g fat, 4 mg cholesterol, 13 g carbohydrates, trace fiber, 1 g protein, 46 mg sodium.
