Egg and Tomato Scramble

1 plum tomato, peeled and chopped
1 tsp. chopped fresh basil...OR...1/4 tsp. dried basil
Egg substitute equivalent to 1 egg
1 tsp. water
1 garlic clove, minced
1/8 tsp. salt-free seasoning blend
Pepper to taste
1 slice bread, toasted
In a small bowl, combine tomato and basil; set aside. In another bowl, combine the next 5 ingredients.
In a small nonstick skillet coated with nonstick cooking spray, cook and stir egg mixture over medium heat until egg is nearly set. Add tomato mixture; cook and stir until egg mixture is set. Serve with toast.
