    1/2 c. fat-free small-curd cottage cheese
    2 T. low-fat shredded cheddar cheese
    2 T. chopped tomato
    1 T. chopped green pepper
    1 T. chopped green onion
    1 'hot' baked potato

    Combine first 5 ingredients. With a sharp knife, cut an X in the top of the potato; fluff pulp with a fork. Top with cottage cheese mixture. Serve immediately.
