Whole Tilapia w/ Onion & Lemon for 2

Makes 2 Servings
1 1/4 pound red onions, thinly sliced
3 tablespoons lemon juice
1 tablespoon minced fresh ginger
1 whole tilapia (about 1 1/2 lbs.), dressed (gutted, with head and tail
attached)
1 tablespoon extra-virgin olive oil
2 large lemons
3 tablespoons minced cilantro
salt and pepper
In a large bowl, mix onions, lemon juice, and ginger. Set 1 or 2 onion slices aside, then spread remaining onion mixture in a 9 x 13 inch baking dish. Rinse fish, pat dry, and brush on both sides with oil; place on top of onion
mixture.
Cut a 1/2 inch slice from both ends of each lemon. Stuff fish cavity with these lemon ends, reserved onion slices, and 1 1/2 tablespoons of the cilantro. Thinly slice remainder of each lemon; tuck lemon slices around fish.
Sprinkle remaining 1 1/2 tablespoons cilantro over onion mixture and lemon slices.
Bake in a 400 degree oven until fish is just opaque but still moist in thickest part; cut to test (about 20 minutes).
To serve, gently pull skin from fish; serve fish with onion-lemon mixture. Season to taste with salt and pepper.
