    Low-Fat & Luscious Desserts - AHA
    Serves: 6

    Butter-flavor vegetable oil spray
    3/4 c. coarse gingersnap cookie crumbs (about 12 cookies)
    1 T. + 2 tsp. orange juice
    1 tsp. light corn syrup
    48 miniature marshmallows, plain or fruit flavored
    1 can (15 oz.) apricot halves in extra-light syrup drained, drained
    1 T. light brown sugar, 'divided'
    1/8 to 1/4 cinnamon

    Place foil or paper liners in six 2-3/4-in muffin cups; spray with nonstick cooking spray.

    In a small bowl, combine crumbs, orange juice and corn syrup. Spoon about 2 T. mixture in each liner. Place piece of plastic wrap and press down on mixture to cover bottom; remove plastic wrap. Bake at 350-F for 10 minutes.


    To assemble: For each treat: Place 8 marshmallows over 1 crust. Place 1 apricot half over marshmallows. Lightly spray top of apricot with vegetable spray. Sprinkle with 1/2 tsp. brown sugar and dash of cinnamon.

    Bake for 8-10 additional minutes or until brown sugar has dissolved and marshmallows are are melted and oozing from apricots. Remove from muffin tin and let cool for 5 minutes. Serve warm or chilled.
