Apple Strudel

Serves 12.
2 cups flour
- Pinch salt
- 1/2 cup water
FILLING:
1-1/2 pounds green apples
- 1/3 cup sugar
- 1 cup chopped raisins
- 1 tablespoon lemon juice
- 1-1/2 teaspoons grated lemon rind
- 1 cup breadcrumbs
- 1/4 cup butter, at room temperature
- 1-1/2 tablespoons brown sugar
- 1 teaspoon cinnamon
- Pinch nutmeg
- Whipped cream

Sift together flour and salt. Add water; mix to a stiff dough. Turn onto a floured board and knead 2 minutes. Set aside.
Peel, core, and coarsely chop apples. Mix with sugar, raisins, lemon juice, and lemon rind. Set aside.
Fry breadcrumbs in half the butter until golden. Cool. Mix brown sugar, cinnamon, and nutmeg with breadcrumbs.
Roll out pastry very thinly. Melt remaining butter; brush onto pastry. Sprinkle with breadcrumbs. Spread apple mixture over pastry. Roll up pastry; pinch edges closed. Brush with a little melted butter.
Place on a baking sheet, seam side down. Bake at 375º for 45 minutes. Slice; serve warm with whipped cream.
