Cinnamon Apples with Dumplings

Yield: 4 servings.
1/2 cup all-purpose flour
6 tablespoons sugar, divided
1/4 teaspoon salt
1 teaspoon baking powder
2 tablespoons margarine
1 tablespoon flour
1 cup Apple Juice or Apple Cider
1 tablespoon Cinnamon candies
2-1/2 cups sliced, peeled Apples...OR...1 can (20 oz.) Apple slices, drained
1/4 cup skim milk
Combine the 1/2 cup flour, 4 tablespoons sugar, salt and baking powder. With pastry blender, cut in margarine until mixture resembles coarse crumbs; set aside.
In 2-quart saucepan, combine the remaining 2 tablespoons sugar and the 1 tablespoon flour. Add Apple Juice, stirring until smooth. Mix in cinnamon candies and Apples. Cook over medium heat, stirring frequently, until mixture starts to boil. Stir milk into flour-margarine mixture, mixing until smooth.
Drop dough 1/4 at a time over boiling Apples. Cover pan and cook over low heat about 10 minutes or until dumplings are cooked. Cool slightly before serving with whipped topping or cream, if desired.
Per Serving, (1/2 cup Apples & 1 dumpling) equals: 280 calories, 2 g dietary fiber, 6 g fat, 298 mg sodium.
