Crispy Strawberry Napoleons

1/4 c. Splenda granular
1 tsp. ground cinnamon
3 sheets (about 12-16-1/2-in, frozen phyllo dough, thawed
Butter-flavored nonstick cooking spray
1 pt. fresh strawberries, hulled and sliced (about 2 cups)
2 T. confectioner’s sugar
2 c. frozen fat-free whipped topping, thawed
Sifted confectioner’s sugar, optional
In a small bowl, combine Splenda and cinnamon.
Cover phyllo with damp dish towel or damp paper towels. Working quickly, lay 1 sheet of phyllo on large sheet of cooking parchment paper; spray phyllo lightly and evenly with butter spray. Sprinkle with 1 T. cinnamon mixture. Spray both sides of another sheet of phyllo, then stack over first sheet; repeat layers.
Using kitchen shear, cut parchment and phyllo in half crosswise, forming two 12 X 8-1/4-in. rectangles. Transfer phyllo stacks, still on parchment to 2 baking sheets.
Bake at 375-F for 10-12 minutes or until phyllo is golden brown and crisp. Cool. Cut each rectangle into 6 rectangles 4 X 2-3/4 inches each. (To get this size, cut each rectangle into thirds crosswise and lengthwise. Let cool completely on wire racks.
Meanwhile, combine strawberries and confectioner’s sugar.
To assemble:
For each serving, arrange 1 phyllo rectangle on serving plate; top with 1/4 c. whipped topping and 1/4 c. berries; repeat. Then top with third phyllo rectangle. Dust with additional sugar, if desired.
