    Creamy Apple-Lemonade Salad

    2 c. lemonade
    1 pkg. (3 oz.) orange flavored gelatin
    1 container (6 oz.) low-fat lemon yogurt
    2 c. diced red Michigan Apples
    1/2 c. thinly sliced celery
    1 can (11 oz.) mandarin oranges, drained

    Heat 1 cup of the lemonade until just boiling. In a large mixing bowl, dissolve gelatin in hot lemonade. Add remaining lemonade, refrigerate until gelatin starts to set and is the consistency of egg whites. Stir yogurt until smooth and add to gelatin, mixing until evenly combined. Stir in remaining ingredients. Pour into serving bowl and refrigerate until set, about 1 hour.

    One 1/2-cup serving equals: 130 calories….1 gm fiber….1 gm fat…3 mg cholesterol…48 mg sodium.
