    Gingered Lime Gelatin

    1 can (20 oz.) unsweetened pineapple tidbits
    1 pkg. (6 oz.) sugar-free lime gelatin
    1-1/2 c. boiling water
    1 c. diet ginger ale
    1/4 tsp. ground ginger

    Drain pineapple, reserving juice; set pineapple aside. In a bowl, dissolve the gelatin in water. Stir in ginger ale, ginger and reserved juice. Chill until syrupy, about 45 minutes. Fold in pineapple.

    Transfer to a 6-cu mold coated with nonstick cooking spray. Refrigerate until firm.

    Unmold onto a serving platter (wet the serving platter to position the gelatin).

    One 1/2-cup serving equals: 21 calories...37 mg sodium...0 cholesterol...4 gm carbohydrate...1 gm protein...trace fat ++++ Exchanges: Free Food
