Orange Juice Sorbet
Yield: 4 cups
1 quart of fresh-squeezed orange juice
2 tablespoons Cointreau or other orange liqueur
1/4 teaspoon lemon extract
Sliced fresh strawberries (optional)
Place the first three ingredients in an ice-cream freezer and freeze according to the manufacturer's instructions.
Alternatively, combine the ingredients and pour the mixture into three large ice-cube trays; freeze until firm or overnight.
Remove from the freezer and let stand at room temperature for 5-10 minutes until the cubes begin to thaw and soften. Place the cubes into a blender or food processor and blend until smooth. Serve immediately with sliced strawberries, if desired.
Note: Leftovers can be returned to the freezer and reblended in food processor as needed. The sorbet texture actually becomes smoother with a second freezing and blending.
