    Good fill for men--and women, too! This scrumptious pie is just peachy and it's as light on the fork as it is on the hips!

    Makes 8 servings

    1 9-inch deep-dish frozen pie crust shell
    3/4 cup sugar
    2 tbsp. corn syrup
    5 tbsp. cornstarch
    1 cup boiling water
    1/4 cup peach-flavored Jell-o powder
    8-9 medium peaches, peeled & sliced

    Bake pie crust according to package directions. Cool completely before filling.

    To prepare filling: Combine sugar, corn syrup, cornstarch, and boiling water in a medium saucepan. Cook and stir over medium-high heat until mixture thickens and becomes clear (it will become quite thick). Remove from heat and stir in Jell-o powder. Let cool to room temperature. Add peaches and stir until evenly coated.

    Pour into prepared pie shell. Refrigerate for 3-4 hours before serving.

    Hint: Look for a frozen pie crust shell that has less than 7 grams of fat per serving.
