    Plan ahead...needs to chill

    1 envelope unflavored gelatin
    1/2 c. 'cold' water
    1 pkg. (.3 oz.) sugar-free lime gelatin
    1/2 c. boiling water
    3 cartons (8 oz., each) sugar-free, fat free key lime pie yogurt or lemon yogurt
    1-1/2 c. light whipped topping
    1 shortbread crust (8-in.)

    In a small bowl, sprinkle gelatin over cold water; let stand for 1 minute. In another bowl, dissolve lime gelatin in boiling water; stir in unflavored gelatin until dissolved. Refrigerate for 10 minutes. Stir in yogurt. Chill until partially set. Fold in whipped topping. Pour into crust. Chill until firm.

    Nutritional Analysis: One serving equals: 172 calories, 183 mg sodium, 1 mg cholesterol, 24 gm carbohydrate, 6 gm protein, 6 gm fat. Diabetic Exchanges: 1 starch, 1 fat, 1/2 skim milk
