    Apple Bread Pudding

    Apple Bread Pudding

    5-6 cubed whole-wheat bread (about 9 slices)
    2 c. cubed tart apple
    1/2 c. raisins
    4 c. skim milk
    Egg substitute equivalent to 4 eggs
    2 tsp. vanilla
    2 tsp. cinnamon
    1/4 c. fructose

    In a large baking dish, combine bread, apples and raisins.

    In another bowl, whisk together remaining ingredients; pour over bread mixture and let stand 15 minutes so bread can absorb some of the liquid.

    Bake at 350-F for 40-45 minutes or until set and firm. Cut into squares. Serve warm with whipped topping or low-fat ice cream

    One 1/2-cup serving equals: 156 calories (12 from fat)…1 gm fat…2 mg cholesterol…29 gm carbohydrate…3 gm fiber…8 gm protein…218 mg sodium ++++ Exchanges: 2 starch ++++ WWP: 3.4
