    Cucumber-Melon Salad w/Raspberry Viniagr

    Low-Fat, Low-Cholesterol Cookbook - AHA
    Serves: 4

    1 cucumber, scrubbed and partially peeled to leave some green color
    1/2 large cantaloupes, seeded
    1 bunch radishes, scrubbed
    1/4 c. raspberry vinegar
    Black pepper
    4 lettuce leaves, rinsed and dried

    Cut cucumber into bite-sized pieces. Cut cantaloupe into cubes or small melon balls. Thinly slice radishes. In medium bowl, combine first 3 ingredients. Toss with vinegar and sprinkle with black pepper. Serve chilled on individual plates lined with lettuce leaves.

    One 3/4-cup serving equals: 39 calories…1 gm protein…9 gm carbohydrate…Trace fat…0 cholesterol…15.8 mg sodium
