    Fresh Broccoli Salad

    Plan ahead....needs to chill at least 2 hours Exchanges
    Serves: 12

    2 lbs. fresh broccoli, cut into bite-sized pieces
    1 pkg. (12 oz.) fresh mushrooms, sliced
    2 small red onions, thinly sliced into rings
    1 can (2-1/4 oz.) sliced ripe olives, drained
    1-1/2 c. low-fat Italian salad dressing
    1/3 c. shredded Parmesan cheese

    Combine all ingredients in a large bowl; toss to mix well. Cover and chill for at least 2 hours.

    One serving equals; 66 calories, 182 mg sodium, 3 gm cholesterol, 9 gm carbohydrate, 5 gm protein, 2 gm fat ++++ Exchanges: 2 vegetables, 1/2 fat
