    Mushroom Slaw

    Recipe Introduction

    Plan ahead...needs to chill for at least 1 hour. Serves: 6.

    1/4 pound mushrooms
    1/2 cup fat-free mayonnaise
    4 cups shredded cabbage
    1/2 dill pickle, chopped
    1 sweet gherkin, chopped
    1/2 teaspoon dried dill
    1/4 teaspoon pepper
    2-1/2 tablespoons chopped chives

    Slice mushrooms thin; mix with mayonnaise in a large bowl. Mix in cabbage, pickle, and gherkin. Add dill, and pepper; mix thoroughly.

    Refrigerate slaw at least 1 hour, to let flavors blend. Garnish with chopped chives.

    Per serving: 37 calories, trace fat, 0 mg cholesterol, 9 gm carbohydrates, 1 gm fiber, 1 gm protein, 336 mg sodium.
