Recipe Introduction
An all-purpose corn and black bean salsa--great by itself, spooned over chicken, fish or baked potatoes, or stuffed in a pita pocket with tuna and chopped lettuce. Potential uses are limited only by your imagination!
Makes about 4 cups.
1 cup whole-kernel corn (thaw first if using frozen)
1 cup diced tomato
1 cup canned black beans, drained and rinsed
1/2 cup diced onions
1/2 cup diced red bell pepper
1/4 cup diced carrots
1 jalapeno pepper, seeded and minced
1 clove garlic, minced
1 tsp. ground cumin
1/2 tsp. chili powder
1/4 tsp. black pepper
1/4 cup chopped fresh cilantro
Spray a medium saucepan with non-stick spray. Add all ingredients except cilantro. Cook and stir over medium heat for 5-7 minutes, until onions are tender and vegetables are heated through…… Stir in cilantro. Serve warm or cold.
