Low Fat Arroz Con Pollo
List of Ingredients
2 tsp. olive oil
2 skinless, boneless chicken breasts
4 skinless chicken thighs
1 can (14.5 oz.) chicken broth, skim off fat
1 cup uncooked converted regular white rice
1/2 cup sliced green onion
1/2 cup chopped red bell pepper
1/4 tsp. saffron
1/8 tsp. garlic powder
1/8 tsp. ground red pepperRecipe
Heat large nonstick skillet over medium-high heat. Add oil and continue heating until it "ripples." Add chicken pieces and cook until browned on all sides. Move chicken pieces to side of the skillet and add remaining ingredients. Blend well then place chicken into rice mixture. Bring to a boil; reduce heat to low, cover and simmer 15 minutes, stirring occasionally. Turn chicken over, cover and simmer an additional 10 minutes (until chicken is fork tender and juices run clear).
