- 2 pkgs. frozen peas
- 1 cup water
- 1 small onion, chopped
- 1 stalk celery, chopped
- 1 cup chicken broth
- 1 cup light cream
- S&P
- 2 tsp. mint leaves
Instructions
- Cook peas in water until tender, place pleas and liquid in blender. Add onion, celery and broth; blend until smooth.
- Pour into a bowl, add cream, s&p and crumbled mint leaves.
- Freeze using freezer bag method.
- Defrost soup in fridge. Serve chilled.
