    List of Ingredients


    • 2.5 lbs. Coarse Semolina (Polenta Cornmeal)
    • 1 yellow onion, diced small
    • 2 tbl. fresh thyme
    • 1 gallon milk
    • 2 tbl. olive oil
    • Salt and White Pepper


    Instructions


    1. In a hot pan, coat the bottom with olive oil.
    2. Add thyme and sweat out.
    3. Add onion and sweat out.
    4. Add milk and reduce haet to medium.
    5. Bring milk to a simmer and quickly whisk in the semolina. Start with about 2 cups and add more as needed, the mix should be extreamly thick.
    6. Stir continuously until semolina is cooked, approx. 4 minutes.
    7. Add salt and white pepper to taste.
    8. Line a sheet pan wioth parchment paper and spread polenta evenly.
    9. Let cook and cut into 1/2 in cubes. Deep fry for a few seconds in a very hot fryer until they are golden.
