List of Ingredients
- 2.5 lbs. Coarse Semolina (Polenta Cornmeal)
- 1 yellow onion, diced small
- 2 tbl. fresh thyme
- 1 gallon milk
- 2 tbl. olive oil
- Salt and White Pepper
Instructions
- In a hot pan, coat the bottom with olive oil.
- Add thyme and sweat out.
- Add onion and sweat out.
- Add milk and reduce haet to medium.
- Bring milk to a simmer and quickly whisk in the semolina. Start with about 2 cups and add more as needed, the mix should be extreamly thick.
- Stir continuously until semolina is cooked, approx. 4 minutes.
- Add salt and white pepper to taste.
- Line a sheet pan wioth parchment paper and spread polenta evenly.
- Let cook and cut into 1/2 in cubes. Deep fry for a few seconds in a very hot fryer until they are golden.
