Four Onion Soup
List of Ingredients
1 medium sweet onion, chopped
1 medium yellow onion, chopped
1 leek, sliced
3 shallots, minced
1 Tbsp. olive oil
1 tsp. crushed rosemary
1 tsp. white pepper
4 cans double strength beef broth
Seasoned croutons
Sliced provolone cheese
Recipe
In a Dutch oven, brown the onions in the olive oil. Season with white pepper and rosemary, cook until the onions are translucent. Add 3 cans of beef broth, turn heat down and allow it to simmer for about 30 minutes. Add the remining can of beef broth and 1 can of water.
Ladle the soup into bowls or ramekins. Add croutons, cover with provolone. Place under broiler for a few minutes until the cheese starts to brown.
Serves 4.
