Oriental Rice

List of Ingredients
- 1 1/2 cups water
- 1 cup chicken broth
- 1 1/3 cups uncooked long-grain white rice
- 2 tsp olive oil
- 2 T finely chopped onion
- 2 T finely chopped green pepper
- 1/2 cup chopped pecans
- 1/4 tsp ground sage
- 1 cup finely chopped celery
- 5 oz sliced water chestnuts (shhh...I chop into small pieces so older son don't see them)
- 1/4 tsp nutmeg
- pepper to taste
Instructions
- Bring water and broth to boil in a medium size sauce pan.
- Add rice and stir. Coever and simmer 20 minutes.
- Remove pan from heat. Let stand, covered for 5 minutes or until all liquid is absorbed. Set aside.
- Heat oil in large nonstick skillet. Saute onion and celery over moderate heat for 3 minutes. Stir remaining ingredients including the cooked rice. Fluff before serving
