    Oriental Rice

    List of Ingredients


    • 1 1/2 cups water
    • 1 cup chicken broth
    • 1 1/3 cups uncooked long-grain white rice
    • 2 tsp olive oil
    • 2 T finely chopped onion
    • 2 T finely chopped green pepper
    • 1/2 cup chopped pecans
    • 1/4 tsp ground sage
    • 1 cup finely chopped celery
    • 5 oz sliced water chestnuts (shhh...I chop into small pieces so older son don't see them)
    • 1/4 tsp nutmeg
    • pepper to taste


    Instructions


    1. Bring water and broth to boil in a medium size sauce pan.

    2. Add rice and stir. Coever and simmer 20 minutes.

    3. Remove pan from heat. Let stand, covered for 5 minutes or until all liquid is absorbed. Set aside.

    4. Heat oil in large nonstick skillet. Saute onion and celery over moderate heat for 3 minutes. Stir remaining ingredients including the cooked rice. Fluff before serving
