    2 whole chicken breast (boneless)
    1 tablespoon curry powder
    1/4 teaspoon thyme
    1/8 teaspoon pepper
    1 tablespoon oil
    1 carrot; sliced
    1 onion; sliced
    1 cube bouillon, chicken
    1 pepper, red or green; cut into chunks
    4 cups rice; cooked

    Recipe



    Cut chicken into chunks. toss with curry, thyme and pepper.

    Heat oil. cook chicken until lightly browned

    Add carrot, onion, bouillion and 1 cup water; heat to boiling. Reduce heat
    to low; cover and simmer 15 minutes, stirring occasionally. Add
    pepper; stir, then continue cooking 10 minutes longer or until chicken and
    veggies are fork tender.

    Serve over rice

    Yield: 4 servings
