Bowtie Pasta with Cauliflower & PineNuts
List of Ingredients
2 TBS. olive oil
1/2 C onion, minced,
2 tsp. minced garlic
1 head cauliflower (about 1 1/2 lb.) cut into florets
1 C chicken broth
2 TBS balsamic vinegar
1/2 C golden raisins
S&P
8 oz. cooked bow tie noodles
1/4 C toasted pine nuts
1/4 C grated parmesan
1/4 C minced fresh parsley
Recipe
Heat olive oil in large skillet over medium heat. Add onion and cook 2 minutes. Add garlic and cauliflower; cook 1 minute. Add chicken broth, vinegar, and raisins. Bring to a boil, reduce heat and simmer, covered, until just tender, about 10 minutes. Cauliflower should not be
mushy. Season with S&P. Toss with bow ties, pine nuts, cheese and parsley. Serves 4.
