    Ravioli with Basil and Tomatoes

    List of Ingredients




    1 (9oz) package of fresh cheese ravioli
    1 large red onion, about 8 oz., cut into 1/3 inch dice
    1 14 1/2 oz can of chunky pasta style tomatoes
    2 TBS balsamic vinegar (or a little less, to taste)
    salt
    a dash of red pepper flakes or Tabasco sauce
    1/3 C fresh basil leaves, julienne
    Grated parmesan

    Recipe



    Stir fry onion in a little olive oil until heated through, about 2 minutes. Add tomatoes with their liquid, vinegar, salt and red pepper. Boil 2 minutes. Add cooked ravioli and stir fry 30 seconds until hot. Add basil and adjust seasoning. Serve hot with grated cheese. Makes 2 main dish
    or 4 side dish servings.
