    Chicken Athena

    List of Ingredients





    1 lb. boneless chicken breasts, skinned and cut into cubes
    1 TBS olive oil
    1 onion, cut into chunks
    1 (14 1/2 oz.) can stewed tomatoes
    1 jar (6 0z.) marinated artichoke hearts
    1/2 LB sliced mushrooms
    1/4 tsp. rosemary
    1/3 C crumbled feta cheese

    Recipe



    In skillet, brown chicken in oil, add onion and mushrooms and cook 2 minutes. Stir in tomatoes, marinade from artichoke hearts and rosemary; cook over medium heat 10-15 minutes or until thickened, stirring frequently. Stir in artichokes and heat through. Top with cheese. Garnish with chopped parsley.
