    Chicken Tortilla Casserole

    List of Ingredients




    CHICKEN TORTILLA CASSEROLE

    4 chicken breasts, halved, cooked and cut in chunks.
    1 dozen corn tortillas, cut into 1 inch strips
    1 lb. grated cheddar or Tillamook cheese
    1/2 C chicken broth (or a little less)
    2 small cans Ortega Green Chili Salsa
    1 can cream of mushroom soup
    1 grated onion
    1/2 C sour cream
    sliced mushrooms
    small can sliced black olives, drained





    Recipe




    Mix broth, salsa, soup, onion, sour cream, mushrooms, olives, and cheese together to make the sauce. Heat and set aside. Save a little cheese for the top of casserole.

    Layer in a large greased casserole:
    tortilla strips
    chicken
    sauce

    Repeat layers, ending with the leftover cheese. Cover and refrigerate for 24 hours.
    Bake 1 hour @ 325.
