List of Ingredients
2 broiler-fryers, cut into pieces and skinned
1/4 C olive oil
2 medium onions sliced, 2 carrots sliced, 1 stalk celery sliced, 1 green pepper sliced
1 lb. mushrooms, sliced or halved
2 cloves minced garlic
1 (1-lb, 12 oz.) can chopped tomatoes, undrained
1 pkgs. instant chicken broth or 2 bouillon cubes
1/4 - 1/2 C chopped parsley
S&P
1/2 tsp. EACH dried oregano, basil, marjoram, rosemary, thyme
1/2 C sherry
1/2 C sliced black olives
Parmesan cheese
Recipe
In a large Dutch oven, sauté onion, garlic, green pepper and mushrooms in olive oil for a few minutes. Stir
in tomatoes, broth, parsley, seasonings and sherry. Cook a few minutes to blend. Add chicken to pot,
cover and bake at 350 for 45 minutes or until chicken is almost tender. Uncover, add olives and bake 15 to
20 minutes longer. Remove chicken and vegetables to platter. Rapidly boil liquid until slightly reduced and
thickened. Pour over chicken. Sprinkle with Parmesan and serve with pasta or rice. Serves 6-8.
