    Turkey Picadillo

    Picadillo is a popular Latin-American filling for empanadas, tamales and vegetables. It's savory-sweet and traditionally made with beef or pork . Delicious as it is as a filling, it's also wonderful on its own, accompanied by rice or rolled in hot tortillas. My husband loves this just over rice!


    List of Ingredients


    • 3 TBS vegetable oil
    • 1 large onion chopped
    • 1 green pepper chopped
    • 1 lb ground turkey
    • 1 (14 1/2 oz) can diced tomatoes, drained
    • 1 tsp dried oregano crumbled
    • salt and pepper
    • 1/3 cup raisins
    • 1/2 cup diced green olives
    • 2 TBS capers, rinsed
    • 1 to 2 chopped hard-boiled eggs, optional


    Instructions


    1. Heat oil in large skillet. Saute turkey, stirring, until color changes, about 5 minutes. Drain turkey in colander.
    2. In same pan, add onion and green pepper. Saute over medium heat until tender, about 7 minutes. Return turkey to pan.


    3. Add tomatoes, oregano, salt and pepper and raisins. Bring to boil and simmer for 5 minutes. Remove from heat.
    4. Stir in olives, capers and eggs. Adjust seasonings to taste.
