    List of Ingredients





    4 TBS. olive oil
    1 large onion, coarsely chopped
    1 stalk celery, coarsely chopped
    2 large carrots, peeled and chopped
    4 cloves garlic, crushed
    1/4 C chopped parsley
    2 zucchini. diced
    1/2 small head green cabbage (about 3/4 lb.), chopped
    16 oz can chopped tomatoes, untrained
    3/4 C chopped fresh spinach
    4 C beef broth
    1 potato, peeled and diced
    1/2 C elbow macaroni
    S&P
    a splash of white wine (optional)
    Italian herbs
    1/2 - 1 Cup Parmesan cheese

    Recipe




    Heat olive oil in soup pot. Sauté onion, celery carrots, garlic and parsley over medium heat for
    10 minutes, until soft but not brown. Add zucchini, cabbage, tomatoes with their juice and
    spinach. Cover and simmer for 10 minutes. Add broth, potato, and macaroni. Simmer uncovered for 20 minutes or until potatoes and cabbage are tender, adding wine and herbs at this time. Top with cheese. This can be refrigerated up to 4 days or frozen.
    Serves 8.
