    Garlic Herb Croutons

    List of Ingredients

    1/2 Italian Loaf (see note2)
    4 Tablespoons Extra Virgin Olive Oil
    3 Garlic cloves
    2 teaspoon fresh Italian Parsley (or Basil), chopped very fine
    1 teaspoon fresh orgegano, chopped very fine

    Recipe

    1. Slice bread into 1/2-inch slices. Stack a few slices up and cut into cubes, leaving crust on.
    2. Repeat with remaining slices.
    3. Peel skin from garlic cloves. Press garlic cloves with garlic press. (if garlic press is unavailable, use side of chefs knife to press garlic cloves and then mince very fine).
    In a small bowl, mix garlic with 2 or 3 teaspoons of water to form a paste.
    4. Heat oil in frying pan. Add garlic, bread cubes and spices.
    5. Stir constantly until croutons are golden, 2 or 3 minutes.
    6. Put croutons onto paper towels to drain.

    Note: White bread can be used, but day-old Italian or
    French loaf is preferable.

    Note2: Dice only enough bread to fill a 12-inch fry pan which may be less that 1/2 loaf. (about 4 Cups)

    Note3: Save unused croutons for later use. Be sure they are dried out well by placing in an oven at the lowest temp for 30 minutes. Let cool to room temp and then store with one paper towel in an air tight container in refrig.
