    Creamy Peach Ice Cream

    List of Ingredients




    6 cups mashed ripe peaches (about 2 1/2 pounds)
    1 cup sugar
    3 large eggs
    1 1/2 cup sugar
    2 Tablespoons all-purpose flour
    1/2 teaspoon salt
    4 cups milk
    1 cup whipping cream
    1 Tablespoon vanilla extract
    Garnishes: fresh peach slices, thin gingersnaps

    Recipe



    1. Combine peaches and 1 cup sugar; stir well and set aside.
    2. Beat eggs at medim speed with an electric mixer until frothy. combine 1 1/2 cups sugar, flour and salt; stir well. Gradually add sugar mixture to eggs; beat until thickened. Gradually add milk; blend well.
    3. Pour custard mixture into a large saucepan. Cook over medium-low heat, stirring constantly, until mixture thickens and coats back of a metal spoon (about 20 minutes).
    Remove from heat and set pan over a bowl of ice water; stir gently until custard cools. Stir in whipping cream, vanilla and mashed peaches.
    4. Pour mixture into freezer container of a 1-GALLON hand turned or electric freezer. Freeze according to manufacture's instructions.
    5. Pack freezer with additional ice and rock salt, cover with heavy towel and let stand 1 hour before searving.
    Garnish, if desired
