Mucendra (~Lentils with Rice~)

1 medium onion
Olive oil
3 cups green lentils
1 cup rice
Salt and pepper, to tasteRecipe
1. Dice, and sauté onions in olive oil.
Add salt and black pepper to taste.
2. Add about 8 cups of water, and bring to a boil.
Add lentils and lower heat to medium (or less), and simmer covered for about 1/2 hour. You may need to add some more water (depends on how much the lentils have absorbed).
3. Add the rice, and cook for another 20 minutes.
Remove from heat.
